Chicken Caldereta

Kaldereta is a famous and favorite Filipino dish. There are varieties of Kaldereta:

  • We have the Beef Kaldereta as the most common and probably the most expensive among the types of Kaldereta because of the beef meat.
  • We also have the Kalderetang Kambing which is a favorite pulutan during drinking sessions.
  • I am not sure if you have tried the Chicken feet Kaldereta, but it is also delicious. However, if you are not the type of person who would eat chicken feet, then try cooking chicken caldereta instead. It is an alternative to Beef Kaldereta.

Chicken meat is definitely much cheaper than beef meat, that is why a lot of people would use pork meat instead of beef. But whatever type of meat you want to use, the basic ingredients are the same as well as the procedure of cooking your Kaldereta dish.
Ingredients:

  • 1 kg chicken meat cut into serving size
  • 1 cup carrots, sliced
  • 1 cup potatoes, sliced
  • 1 cup red bell pepper cut into strips
  • 1 1/2 cloves of garlic crushed
  • 1 onion finely chopped
  • 1 small sized liver spread
  • 1 cup of tomato sauce
  • 1/2 bar of grated cheese
  • 1 tsp chili crushed
  • 2 cups of water
  • 1/2 cup of cooking oil

Procedure:

  1. Preheat pan, and pour the cooking oil
  2. Fry the carrots and potatoes
  3. Once fried, remove from the pot and drain the oil by placing them on a paper towel
  4. In the same pan, sautee the onion, garlic.
  5. Then add the chicken meat, allow to simmer for at least 3-5 minutes
  6. You can then add the water and allow the chicken meat to boil until the meat is tender
  7. Add the tomato sauce, and then the liver spread. Let it simmer again for 10 minutes.
  8. Place the red bell peper strips, the fried carrots and potatoes and the crushed chilli.
  9. Boil for a 2-3 minutes, then place the grated cheese and boil again for 5 minutes to melt the cheese.
  10. Season with salt and pepper to taste.

This dish is best served while hot and together with hot steamed rice. Truly Filipino and truly sumptuous meal. Inexpensive alternative but still as flavorful. Happy eating.
