Chicken Arrozcaldo

Rain rain go away, come again another day; since we can not do anything to stop the rain. Because the rainy season here in our country has just started, might as well enjoy it. How to do that?  The rainy weather can be exciting by eating a hot soup. Or the famous Pinoy recipe, Chicken arozzcaldo. It is easy to prepare and cooks in just few minutes.
What you need:

  • Chicken pieces
  • 1-2 TB cooking oil
  • 1 med. onion, diced small
  • garlic, chopped
  • 2″ ginger, sliced (or less, to taste)
  • 1 cup regular white rice or malagkit
  • 3 cups or more chicken broth
  • 2 tsp. saffron threads (optional)
  • Green onions, sliced, for garnish
  • Black pepper, to taste
  • calamansi slices, to taste

How to prepare:

  1. Saute garlic in oil until brown in color then set aside (for topping).
  2. Add chicken pieces with onion and ginger. Saute chicken until light brown.
  3. Add regular rice or malagkit and stir for a few minutes.
  4. Add 2 cups broth and saffron threads, boil then simmer.
  5. Make sure that pot is covered for about 15 minutes till rice is soft and chicken is tender.
  6. You may choose to add more broth to reach your desired consistency.
  7. Add salt and black pepper to taste.

You may start serving it in  bowls topped with green onions and toasted garlic.  May add a sprinkle of lime or calamansi juice as desired. It is also best served with fried tofu. Enjoy the rainy season by eating this delicious Chicken Arozzcaldo with tofu recipe. Start cooking and happy eating.
