Chicken Guisado is the answer to this dilemma. This dish is wallet-friendly but the nutritional value is still high. As we all know, lycopene is a great source in preventing cancer. Food enriched in tomato sauce are also rich in vitamin C, which is exactly what we need during the rainy season.
The colorful appearance of the food will make it enticing aside from the fact that most kids love chicken. So instead of serving it as the usual fried chicken, provide your kids with a different twist.
Here are the ingredients:
- 1/2 kg chicken, cut into serving portions
- 1 tbsp calamansi juice
- 4 cloves garlic, crushed
- 1 pc medium onion, sliced
- 1 pc medium singkamas, cut into cubes
- 1 pouch tomato sauce
- 100 g baguio beans
- 1 pc medium red bell pepper, cut into strips
- 4 stalks green onions, cut into strips
These are the steps to follow:
- Marinate chicken in 2 tbsp soy sauce, calamansi juice and 1/3 tsp iodized fine salt (or 1 tsp iodized rock salt) for 30 minutes. Fry until brown.
- Saute garlic, onion and singkamas. Add chicken, tomato Sauce and 1/2 cup water. Season with 1 tsp soy sauce, 1/3 tsp iodized fine salt (or 1 tsp iodized rock salt )and 1/4 tsp pepper. Simmer until meat is tender.
- Add baguio beans and bell peppers. Simmer until vegetables are cooked.
